Lunch used to be little more than a rushed pause for Indie Marsh, squeezed between back-to-back meetings and afternoons packed with deadlines. With limited time to think about food, she often picked whatever was easiest, including prepacked café meals or takeaway options from nearby. The convenience helped her get through busy days, but over time she noticed a problem. By the middle of the afternoon, Indie was regularly feeling tired, unfocused and mentally foggy. That was when she realised her everyday lunch routine needed to change.
Why Indie Marsh Turned to the Mediterranean Diet
Instead of following a restrictive eating trend, Indie decided to explore the Mediterranean diet as a practical and sustainable way of eating better. What appealed to her most was that it did not require spending an entire lunch break cooking or following complicated food rules.
The Mediterranean approach gave her flexibility while encouraging fresh and flavourful ingredients. Rather than focusing on strict restrictions, she began giving priority to vegetables, whole grains, lean proteins and healthy fats. This allowed her to build satisfying meals without making food preparation another stressful part of her schedule.
Simple and Colourful Lunches Became the Priority
Indie quickly discovered that her new lunch routine did not need to involve complicated recipes. She started preparing simple, colourful meals either in the morning or the evening before. Her lunches commonly combined fresh vegetables with whole grains, lean meats and healthy sources of fat.
This approach made it easier to prepare food that was both enjoyable and practical. Instead of relying on whatever happened to be available near work, she had meals ready that better suited the way she wanted to eat.
Ten Minutes Was Enough to Make a Difference
One of the biggest lessons Indie learned was the importance of keeping her routine realistic. She knew she did not have an hour available every day to prepare lunch, so she focused on meals that could come together quickly.
“I have no hour to get lunch ready,” she says. “But in ten minutes I can create something that makes me feel incredible all through the day.”
That practical mindset helped make the Mediterranean style of eating easier to maintain. Instead of expecting every meal to be elaborate, she concentrated on fresh ingredients and combinations that could be prepared within the limited time she actually had.
Her Desk Lunches Started Feeling Like Coastal Café Meals
The biggest visual change was noticeable in the meals Indie brought to work. The uninspiring desk salads and rushed takeaway lunches began disappearing. In their place were colourful meals filled with lively flavours, fresh herbs and drizzles of olive oil.
Her lunches started looking and tasting more like dishes that could have been served at a relaxed coastal café rather than food hurriedly eaten between meetings. The transformation did not go unnoticed by the people around her.
“People started asking what I was eating—and whether they might get the recipe,” Indie says with a smile.
A Flexible Approach Made the Routine Sustainable
For Indie, the success of the change came from keeping things manageable rather than trying to make every lunch perfect. Her approach focused on a few simple ideas:
- Prepare lunch in the morning or the night before.
- Choose plenty of fresh and colourful vegetables.
- Add whole grains for a more complete meal.
- Include lean protein to make lunch satisfying.
- Use healthy fats such as olive oil.
- Add fresh herbs and simple flavours to keep meals interesting.
- Keep preparation realistic enough to fit into a busy working day.
Lunch Became More Than Just Food
For Indie, changing her diet eventually became about more than improving what was on her plate. It also changed the way she treated her midday break. Instead of seeing lunch as another task to rush through during a demanding workday, she began treating it as a small moment of self-care.
The Mediterranean-inspired routine gave her an opportunity to step away from work, enjoy something fresh and satisfying, and reset before returning to the rest of her day. What had once been a hurried gap between meetings gradually became a meaningful pause—one that Indie could actually look forward to.
